ENGLISH VERSION
The first time I was offered a carrot cream soup I wasn’t over the moon… I was a little prejudiced about it. I was attending my annual international macrobiotics course and the cook who was teaching the course for the summer menu offered us a very simple carrot cream soup: the recipe was so simple that I couldn’t even understand what was so special about it, but I was very wrong! It was extraordinarily simple and amazing for how tasty it was. Since then, carrot cream soup has been among my repertoire of evening vegetable creams for spring and summer.
Yes, even for summer, you understood correctly: even in summer you may need a relaxing and welcoming flavor in the evening that brings us back to our center, just like the flavor of this cream that I prepare by also adding peeled lentils to create a single dish for a light dinner.
Use carrots with the peel!
Buy organic carrots and use them with the peel. Carrots are rich in vitamin C, beta-carotene and antioxidants and all these nutrients are concentrated in the peel, so eliminating it would mean eliminating the surface with a greater concentration. This means that carrots have the ability to protect the body from degraded cells, support the development of new cells and support the immune system. Nails, skin and hair are the parts that benefit most. Furthermore, having a light dinner based on this cream soup is a good way to lighten the work of the liver (especially after excesses!).
Use untreated carrots, avoid waste and increase well-being for you and the planet!
Now let’s go to the recipe for carrot cream soup.

200 g carrots
100 g peeled red or yellow lentils
1 small onion
1 small piece of celery
1 small clove of garlic
EVO oil, salt, pepper
1/2 teaspoon of turmeric, a pinch of fresh ginger
1 scant tablespoon of apple cider vinegar
Aromatic herb pesto (I used a mix of rocket, basil and dill)
Method
Wash the peeled lentils well.
Pour 1 tablespoon of EVO oil and a little water into a saucepan, then add the onion, garlic, celery and carrots cut into chunks and cook for 5-8 minutes. Also add the salt, ginger and turmeric and continue cooking.
Add the red lentils and cover generously with hot water, the apple cider vinegar and cover with the lid and cook slowly for about 30 minutes.
After the cooking time, finish by adjusting the salt and pepper and blend everything with a mixer until you get a homogeneous and smooth mixture.
Take a few spoonfuls of your pesto, and if it is too thick, dilute it with a spoonful of extra virgin olive oil and use it to garnish the cream soup.

Ciao Rossella, che bello leggerti. Fammi sapere come è andata!
Grazie sempre Jyoti e spero ci rivediamo presto! Un caro abbraccio.
