Enjoy!
ENGLISH VERSION
I think it’s been at least 10 years since I prepared and ate a cold pasta salad, in my mind it had been relegated to an “irrelevant dish”. Yesterday I suddenly woke up from this spell with several reasons to support this dish:
It is an excellent way to create a single dish with different recycled ingredients or which otherwise would not be sufficient to create another recipe from scratch
It is possible to obtain a convenient dish to take with us, to the seaside, picnic or work, or to have in the fridge ready to grab, simple and balanced in a short time
I know I’m about to offend someone with this statement, but “pasta salad can be a healthier choice for many” because it has a lower glycemic peak after eating compared to its freshly made analogue, it is enriched with resistant starch , it is assimilated more slowly and our microbiota is advantaged.
To prepare it I recycled the vegetables I had in the fridge and to optimize the times I didn’t choose anything that needed to be cooked separately, so I made everything in “one-pot”, it was just a matter of cutting and possibly blanching (which I did directly into the pasta pot while everything was cooking).
To make it a balanced single dish, in addition to the vegetables I also added legumes, choosing lentils that I had already cooked previously with some vegetables. Sure you could use canned vegetables for convenience, but in such a simple dish even this will make a difference: my lentils were undoubtedly tastier than any package of boiled lentils found on supermarket shelves, but in the absence of a surplus as in my case, you could be satisfied with a packaged legume (I always recommend in glass!). Using legumes and pasta we find the entire pool of essential amino acids needed for protein synthesis, as I always explain to you in my courses.
Brace yourselves pasta eaters, because in this case I decided to calculate around 40 grams of pasta per person in this case, favoring the other ingredients in proportion. This is a type of proportion that I use when I want to stay light and if I increased the pasta by disfavoring vegetables and legumes I know that afterwards I might have a harder time resuming activities that require concentration (e.g. consultancy, studying, social management, newsletters…) . Usually for me I add another portion of vegetables to the meal, or salad with added seeds and/or olives. This is my personal case, you feel free to increase the doses as you wish based on your personal needs, which are certainly different from mine. Having said that, what is resistant starch? I refer you to a previous post of mine on the subject here. In short, I’ll tell you that starch subjected to heat (for example pasta or potatoes that are cooked) gelatinises, becoming very assimilable but by cooling in this case the starch transforms again, we speak of retrograded resistant starch, more similar to the shape initial. This form is more resistant to enzymes that would otherwise degrade it very quickly, slows down absorption, and consequently contributes to our metabolic health by modulating the absorption of carbohydrates, therefore not rapidly increasing the amount of sugar in the blood. Furthermore, resistant starch and short-chain fatty acids, deriving from its breakdown in the colon, represent a valid support for the intestinal flora, also decreasing the risk of inflammatory intestinal diseases. IMPORTANT: all this as part of a balanced diet!!!
I chose the Timilia wheat fusilli from Valdibella (no ADV, I just like it!) because in addition to the flavor that I adore, I find that it gives an excellent result even when eaten cold, and that’s no small thing for all lovers of express pasta. Other short pasta shapes can also work very well.
When cooking, it is not a good idea to take it out a few minutes early to keep it al dente because, as it is then cooled, it will tend to harden anyway, so in this case too al dente could be a mistake.
Store them in the refrigerator in a glass container with a lid
Now let’s get to the recipe!
Ingredients
80 g of Timilia durum wheat fusilli
Approximately 160 g of boiled lentils
2 carrots
1 small pepper
2 medium-small tomatoes
2 tablespoons toasted almonds
4-5 sprigs of basil and mint
1 wedge of fermented lemon (if missing, a nice grated lemon zest)
1/2 teaspoon oregano
extra virgin olive oil, salt
Procedure
Bring the water for the pasta to the boil and add the salt.
Wash the vegetables: cut the pepper into half-centimeter cubes, the carrots into matchsticks and the tomatoes into fillets. Chop the aromatic herbs and fermented lemon and place them in a bowl with the tomatoes, oregano, salt and set aside.
When the water boils, add the pasta and cook for the indicated time:
3 minutes before the end of cooking, add the diced peppers to the water with the pasta and mix
1 minute before the end of cooking add the carrots
Take the bowl with the tomatoes, drain any excess vegetable water and add a couple of spoons of extra virgin olive oil and stir.
At the end of cooking, drain the pasta with the vegetables, pour it into a large container so that it cools down a little and add the seasoned tomatoes, the lentils and mix everything together, adding more extra virgin olive oil if necessary. Finish by adding the toasted almonds.
Cool and store in the refrigerator in a glass container with a lid. You can keep it for a few days and you will be amazed when you open the lid by the clear scents it gives off. Enjoy!
